Weekly Faves: Recipes & Finds

Happy Sunday! I've got 2 tasty and budget friendly weeknight meal recipes for you. Don't pass these up. Save them for your menu planning.

Did you get a chance to see the northern lights this past week? From what I understand, most of the country was able to. Weren't they amazing! Late Wednesday night we piled the dogs in the car and drove out of the city lights to get the best view. So much fun.

I have recipes for you, of course I do, but first a couple of things I used this week that I LOVE and thought you might want to hear about too.

  1. I was at a cute little floral shop that has the CUTEST home stuffs. They had this adorable and mini cement pot with fancy matches, and I almost paid $25 on the spot for matches and a 2.5-inch pot. Take my money. Instead, I grabbed a cute little pot I already had and got these: Wooden Matches

Y'all, they are like proper wood and when you strike them (I put the striker on the bottom of my jar?) they are like PROPER. Anyways, try it. It feels very bougie to have them instead of my lighter thing.
  2. I finally purchased frames for my artwork. I've had them sitting and waiting to go up on the wall for ages. But it's a whole thing, y'all. I had to rearrange the furniture so they would be highlighted. And then remove the old art. Which led to repairing the holes. Which led to repainting. And FINALLY the art was put up. Stay tuned....I'll grab a phone to show you next week. I have 6 pieces from Kelly Angelovic that I'm so excited to finally get up!

Instant Pot Spaghetti

"Very good, super easy. Much less pots and pans and mess than on the stovetop. I have been wanting to try a spaghetti recipe in the Instant Pot. This recipe will be in our dinner rotation!" ~ Lisa

This is when I should give you a long list of all of the recipes you can make with your Thanksgiving recipes but why on earth wouldn't you just eat the leftovers? I mean, don't we make double what we should just for that very purpose :).

I LOVE having a 2nd Thanksgiving. Maybe a 3rd? But if I look around food blogs and magazines, I'm supposed to be using those leftovers for better purposes like soups and sandwiches and such.

Okay, that's all for this week...have a great week!

This cauliflower potato salad is easy to make and tastes just like the original version. You won't believe it!

Hey friend, If you're anywhere near Minnesota right now, you already know. We are on heat wave number two of the month, and this weekend's heat index is supposed to hit somewhere around 105-108°F. My oven and I are on time-out. So, this week, three things that get dinner and dessert done without heating up the kitchen (or touching a bag of lettuce). Easy No-Bake Banana Cream Pie I'll just say it: this is one of the best pies you'll ever have, full stop, doesn't matter how many pies and cakes...

Hey friend, My garden has officially declared war on me, and the weapon is basil. So. Much. Basil. I'm making pesto by the bucket and freezing it like a squirrel prepping for winter, and I regret nothing. More on that in a second, because I have a recipe obsession to confess. But first: Father's Day is this Sunday, and I am the very last person you should ask for gift ideas. I got Nate more tools for his gold mining kit. Yes, gold mining. No, I have no idea how many other dads are out there...

Homemade Tater Tots Now this one comes with a little secret. I made these over and over last year for a reason I haven't really shared about yet- let's just say it involved a competition cooking show. The whole story is coming soon. For now, the tots recipe is up. The Best Homemade Tater Tots → Hey friend, Remember when I told you my ferritin was a 5? When the normal range starts at 50 and my body was apparently running entirely on spite and coffee? Well. I went back for labs this week. It's...
