Feed the dads (and the gold miners)

Hey friend,

My garden has officially declared war on me, and the weapon is basil. So. Much. Basil. I'm making pesto by the bucket and freezing it like a squirrel prepping for winter, and I regret nothing.

More on that in a second, because I have a recipe obsession to confess.

But first: Father's Day is this Sunday, and I am the very last person you should ask for gift ideas. I got Nate more tools for his gold mining kit. Yes, gold mining. No, I have no idea how many other dads are out there panning for gold, so that tip may not travel far. 😄

Here's what I do know how to do: feed people. And honestly? The best Father's Day gift might just be making him something really good and letting him eat it in peace. So this week leans a little "feed the dads." Burgers. Campfire mac. The kind of food nobody complains about.

Let's get into it.

Campfire Mac and Cheese

Cooked right over the fire (the grill works too), gooey and cheesy with a little smoke. Peak summer comfort food.

Jalapeño Cheddar Burgers

A little heat, a lot of melty cheddar, all the backyard cookout energy. These are the burgers to make this weekend.

Simple Fresh Basil Pesto

Fresh, garlicky, comes together in minutes, and the best way I know to put a basil situation to good use. Use whatever nuts, cheese, etc you have on hand to get this done.

What I can't stop making with it: Pesto Chickpea Salad

This one's not mine, but I'm a little obsessed. It's from Budget Bytes and it's been my easy lunch on repeat all week. Toss it together, thank me later.

Happy Father's Day to the dads, the grill guys, and yes, the gold miners. Go feed someone good this weekend.

See you next time!

Homemade Tater Tots Now this one comes with a little secret. I made these over and over last year for a reason I haven't really shared about yet- let's just say it involved a competition cooking show. The whole story is coming soon. skip to the end for what to eat because you have to feed yourself and your people. Hey friend, I've missed you. And I owe you an explanation for my disappearing act. Five weeks of Fridays. My ferritin level (that's your stored iron) was a 5. FIVE. The normal range starts at 50. I had apparently been running on fumes for...
